Craving cookies with a lot of gooey junk in them? One of my favourite treats are marshmallows. I love them plain or in brownies, ice cream and cookies. You name it!
I wanted to pop some mini's tonight and decided it's probably better if I baked them into cookies. It's safer. Especially when I'm watching my weight. 🤣
I came up with this recipe, making the cookie base not as sweet as the junk I'm putting into it. Bake them for 8 minutes, if you prefer a doughy texture. Bake them for 12 minutes, if you prefer a toasty crunchy cookie. Either way they are a chunk of oooey gooey junk heaven. YUM!
S'mores with Nuts Cookies
Makes 45 cookies
1/2 cup butter, room temperature
1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon pure vanilla
2 1/2 cups organic all purpose flour
2 teaspoons organic cornstarch
1 teaspoon baking soda
1/2 teaspoon salt, optional
1/2 cup fair trade chocolate chunks
1/2 cup mini marshmallows (I use Dandies, better ingredients)
1/4 cup nuts, your choice coarsely chopped
5 graham wafers, coarsely broken
Preheat oven to 375 degrees F.
In a large bowl of your electric mixer, cream the butter with the sugars. Beat on medium or by hand if you're strong
Add the eggs and vanilla
Add the flour, cornstarch, baking soda, and salt
Mix all until until combined
Add the chocolate, marshmallows. nuts and graham wafers
With a tablespoon portion scoop or tablespoon, place batter on baking sheets 2 to 3 inches apart.
Bake for 8 to 12 minutes, depending on the desired doughy or crunchy texture.
Eat hot and gooey or cool down.
