Do you remember Jenny Jones, the former talk show host? Now she has a cooking channel on YouTube. I found these on her blog and made a bunch of changes to the recipe.
During this COVID-19 pandemic, as people are giving, helping and caring, I like to bake and share to show my appreciation.
My son brings my groceries every week. In return, I give him surprise baked goods as gifts of appreciation. Sometimes he surprises me and calls at the last minute. I found this crazy easy lemon treat that is so delicious. Everyone loves lemon. I baked these in 20 minutes, packaged them up, and placed them in his trunk.
So simple, you can just mix all these ingredients in the baking pan. Very low on saturated fat and not a whole lot of sugar. Eat and enjoy!
Lemon Brownies (no chocolate involved)
1 cup all-purpose flour
1/2 cup organic cane sugar
1/4 teaspoon pink Himalayan sea salt (any salt is fine)
1/4 teaspoon baking soda
2 eggs
1/4 cup regular, Greek yogurt, or sour cream
3 Tablespoons avocado oil or other flavourless oil
Zest of ½ a or lemon, or a full lemon to taste
Juice of half a lemon
Preheat oven to 350° F.
Put all ingredients into a bowl.
Stir by hand until smooth.
Spread batter in pan
bake for about 20 minutes.
Cool in the pan for 5-10 minutes.
Lift out of pan and spread icing over warm brownies.
Tip: Go ahead and add 1 tablespoon poppyseed, or 1/4 cup blueberries for a nice variation to the batter.
Lemon Icing
1/2 cup powdered sugar
Zest of ½ a lemon or a full lemon to taste
2 to 4 tablespoons fresh lemon juice, just add a teaspoon at a time until drippy spreadable consistency.
Stir icing ingredients together in a bowl, adding juice gradually until is spreadable.
