Serves 2 (double or increase recipe proportionately if serving more people)
1/2 ripe firm tomato, medium dice
1 whole California Haas avocado, medium dice
1/2 lime, juice and zest
1 tablespoon basil, chiffanade or roughly chop
1/2 ounce Tequila Reposado, or more to taste
1/2 teaspoon coarse kosher salt, or to taste
1/2 teaspoon freshly ground pepper, or to taste
Gently mix all the above ingredients together.
Serve with corn chips, whole grain sweet potato crackers, fresh baguette slices, and/or flatbread of your choice.
Tip:
Ensure that all the avocado is covered with lime juice and tequila to avoid oxidation.
If not serving immediately, press plastic wrap on top of the guacamole so air does not get at the mix.
